Turned on the radio this morning, and heard HAPPY CINCO DE MAYO!! I can’t believe I forgot! I stopped by the store to pick up the ingredients for this yummy dish. Can’t wait to celebrate appropriately!
What you need:
2 can cream chicken soup
2 small cans diced green chilies
1 small can black olives
2 cups sour cream
4 green onions
2 cups jack cheese
4 chicken breasts cooked and cubed
12 flour tortillas
2 cups cheddar cheese
What to do:
Mix the first 6 ingredients together in a medium bowl
Take two cups of mixture and add it to your chicken
Add two tablespoons of chicken mixture to each tortilla shell
Roll the shell up and put it seam down in a baking dish
Spread the remaining of mixture (mixture with out the chicken in it) on top of shells
Sprinkle the cheddar cheese on top
Cover with foil and bake at 350 for 40 to 50 minutes!
I’ve also got a fun craft for the kids to do tonight!
A homemade pinata is just the thing for this occasion!
If you want a super easy and fun craft for the kids to do, this is it!
First blow up a balloon and tie it off. In a bowl mix water and flour. It needs to be a nice thick gooey consistency. Take an old newspaper and rip it into strips. Dip the strips into the flour mixture and lay them over the balloon. Cover the entire balloon with the strips, making sure to leave a hole at the bottom to put candy in. After the balloon is all covered, let it dry completely. I usually let it dry over night. After it is dry, pop the balloon and pull it out of the hole that we conveniently left for ourselves.
